CHARRED PRAWNS, BURNT LEMON

Shell-on king prawns in a cast-iron pan over open coals, with lemons charred until they turn bittersweet. On the table in about twenty minutes.

INGREDIENTS · SERVES 4

  • 1 KGShell-on king prawns
  • 3Lemons, halved
  • 60 GButter
  • 4Garlic cloves, sliced
  • 1Red chilli, sliced
  • 2 TBSPOlive oil
  • TO FINISHParsley, flaky salt

METHOD

  1. HEAT THE IRON

    10 MIN

    Cast iron on the grate over direct coals, dome at 280°C. Let the pan heat for ten minutes before anything touches it.

  2. BURN THE LEMONS

    Lemon halves cut side down on the grate until black, about four minutes.

  3. SEAR

    Burp the lid before opening. Oil in the pan, prawns in a single layer, two minutes a side until pink and charred at the edges.

  4. BUTTER

    Add the butter, garlic and chilli and toss for 30 seconds.

  5. FINISH

    Squeeze the burnt lemons over, scatter parsley and flaky salt, and eat with your hands.
